Mango coconut pancakes

Bring a little piece of paradise to your Easter breakfast table with our exotic mango coconut pancakes. Sweet mango meets the freshness of coconut, nestled in fluffy pancakes made with our reoat chocolate pancake mix. This recipe is like a holiday on a plate and a joyful way to celebrate the Easter season while enjoying the first rays of spring sunshine.

You will need the following ingredients:

For the pancakes:

  • 200g reoat pancake mix chocolate
  • 250ml water
  • 1 ripe mango, peeled and cut into small cubes
  • 50g coconut flakes
  • Some oil for the pan

For the topping:

  • 1 ripe mango, peeled and sliced
  • 30g coconut flakes for decoration
  • Maple syrup or agave syrup (optional)
  • A few edible flowers or small Easter decorations (optional)

Preparation:

  1. Prepare the pancake batter by mixing the reoat Chocolate Pancake Mix with water until smooth. Stir in the mango cubes and coconut flakes.
  2. Heat a pan over medium heat and lightly grease it with oil.
  3. For each pancake, add a ladleful of batter to the pan. Cook until golden brown on both sides. The mango pieces in the batter add a pleasant fruity flavor.
  4. Repeat the process until all the dough is used up.
  5. Arrange the mango coconut pancakes on a large plate and decorate them with the fresh mango slices.
  6. Sprinkle the whole thing with some coconut flakes and drizzle with some maple syrup if desired.
  7. A few edible flowers or Easter decorations next to the plates create the perfect Easter ambience.
